Roasted Patty Pan Squash

On my last visit to the Lancaster Farmer’s Market, I could not resist buying these Patty Pan Squash. I have always loved them for their delicate flavor and they are so cute! Patty Pan are also referred to as Scallop Squash. They come in white, green and yellow and are really a summer squash. I roasted it with thyme and it was just delicious.

Recipe: Roasted Patty Pan Squash

Ingredients

  • Patty Pan Squash
  • 1/2 a Red Onion – large dice
  • Olive Oil
  • Sea Salt – to taste
  • Fresh Ground Black Pepper – to taste
  • Fresh Thyme

Instructions

  1. Preheat oven to 400 degrees.
  2. Wash the squash and cut them in half.
  3. Place them on a baking sheet with the red onion.
  4. Drizzle vegetables with olive oil, salt, pepper and thyme leaves.
  5. Combine and lay out in a single layer on the baking sheet.
  6. Roast squash in oven for 20-25 minutes.
