On my last visit to the Lancaster Farmer’s Market, I could not resist buying these Patty Pan Squash. I have always loved them for their delicate flavor and they are so cute! Patty Pan are also referred to as Scallop Squash. They come in white, green and yellow and are really a summer squash. I roasted it with thyme and it was just delicious.
Recipe: Roasted Patty Pan Squash
- Patty Pan Squash
- 1/2 a Red Onion – large dice
- Olive Oil
- Sea Salt – to taste
- Fresh Ground Black Pepper – to taste
- Fresh Thyme
