I have committed to making/eating something pink everyday for the month of October in support of Breast Cancer Awareness. I was away this weekend and unable to post so this post is covering the last three days.
Recipe: Pink Lemonade
- 6 Lemons – juiced
- 3 1/2 cups Cold Water
- Simple Syrup
- Maraschino Cherry juice
- Mix lemon juice, cold water and simple syrup in a pitcher. Add a dash or two of maraschino cherry juice to tint your lemonade pink.
To make Simple Syrup: Bring a 1/2 cup cold water and a 1/2 cup granulated sugar to a boil in a saucepan. Stir to dissolve sugar. Set aside until cool. Chill in the fridge.
I had mini sugar cookies left over from a get together and the pink lemonade from yesterday. So I frosted the cookies with a pink lemonade glaze. To make the glaze whisk together confectioner’s sugar and pink lemonade until you get a thick glaze consistency.
