I saw this cocktail recipe for “That Cucumber Drink” on Imbibe Magazine’s site recently. Happening to love cocktails with cucumber, I had to try it. My husband and I made them this past weekend. They were deliciously refreshing. They tasted to us like a gin based version of a mojito.
Recipe: Cucumber Cocktail
- 8 Cucumber Slices
- 6 Mint Sprigs
- 3 oz. Gin
- 1 oz. Simple Syrup
- Muddle the cucumber and mint in the bottom of a cocktail shaker. If you don’t have a muddler, a wooden spoon also works.
- Add gin, simple syrup, and lime juice.
- Add ice and shake.
- Strain and pour into a wine glass and garnish with a cucumber slice.
We used Beefeater Gin but I imagine it would be even better with Tanqueray Rangpur Gin.
