Dinner Inspired by The Help…. Fried Chicken.

So I just finished reading The Help and loved it! And all I wanted to do was make the food they kept talking about in the book. So my The Help inspired dinner last night consisted of Buttermilk Fried Chicken, Steamed Cabbage & Vegetables, Sour Cream and Scallion Mashed Potatoes and of course Caramel Cake. [...]

Autumn Chicken Pot Pie

This was such a good and comforting meal last night. Perfect on  a chilly fall evening. I made the crust and the whole dish was so yummy. If you are short on time you can buy pre-paired pie dough. But if you do have the time, make you own, it is well worth it. I [...]

Chicken & Apple Fall Stew

Stews make great dinners on chilly nights. This lighter version made with chicken and apples is perfect on a fall night and a nice alternative to the more traditional version. It was also a quick meal for a busy weeknight. I made a Quick Rosemary-Olive Oil Bread to go along with it. The bread paired [...]

Chicken Avgolemono Soup

This was a great alternative to traditional chicken soup. It’s creamy and delicious not to mention quick to make. The trick is that Avgolemono is thickened and creamy by incorporating eggs, not milk or cream.  Serve with fresh crusty bread. Chicken and Parsnip Soup with Herb-Scented Drop Biscuits

I was flipping through my Cooking Light magazine and this is one of the soups that struck me. I love soups. And I have a growing fondness for parsnips. Parsnips are root vegetable similar to the carrot with a sweeter taste and higher in vitamins and minerals. A great soup for a fall evening. And [...]

I like to serve the same wine that I use for the sauce, I feel it compliments a dish nicely. Because of the lemon in the Piccata sauce you’ll want to [...]

French Bistro Supper – Quick Cassoulet and Pear Tarte Tatin

I ended up having a more hectic week last week than intended, including one sick kid and another with a birthday. So all my meals did not pan out. However, Monday night’s French Bistro night was delicious and made plenty so that we were able to enjoy leftovers another night and lunch. Cassoulet is usually [...]

Last Night’s Dinner – Chicken in White Wine Sauce

Last night I peered in the fridge trying to decide upon what to make for dinner. I had split chicken breasts, so I pulled some veggies and herbs out of the fridge and came up with this Chicken in Wine Sauce dish. It was simple to prepare, juicy and flavorful. I served it alongside couscous [...]

Game Day – Tequila Lime Chicken Tacos, Apricot Tequila Drumsticks and Grapefruit Margaritas!

Sunday we had my sister and brother in-law and a friend over to watch football while we obsessed over our fantasy football scores.  I was out to breakfast with my sister in the morning so didn’t have much time to prepare food for the game when I got back. While trying to decide on what [...]
